Can I keep my Gmail address and still switch?
Forwarding from Gmail to the new provider can be set up, allowing a gradual switch. Alternatively, you can offer contacts your new address and keep Gmail only for receiving during a transition period.
Are encrypted emails more difficult to use?
Proton Mail and Tuta Mail encrypt automatically. Emails between two Proton users are always automatically encrypted. For external recipients, there are simple password links.

When is an email provider listed as Open Source?
A provider qualifies as open source when it publishes its own source code publicly, not just when it uses third-party open source software. Proton Mail releases its client apps (web, iOS, Android) as open source and has them independently audited, but the server code is proprietary. That is why Proton Mail shows "Independently audited" rather than "Open Source". Tuta Mail, by contrast, publishes its full codebase publicly.
